Chicken Cutlet Bento

Leftovers are AWESOME for bento. It saves time in the morning and you get something really tasty for lunch. Last night I made panko breaded chicken cutlets for me and hubs, so today the leftovers are in my bento box.

In the small container is lime cumin coleslaw. In the black bento box: frozen edamame (they look like the rooftops did this morning, all frosty!) baby carrots, a small container of dipping sauce for the cutlets (mayo + ketchup + sriracha), slices of chicken cutlet, and slices of fuji apple. 

Tomorrow I am going to the farmers market. It seems like forever since I have been to the market and I really miss it. 

Lime Cumin Coleslaw
1 baby carrot, grated
about 1/2 cup thinly sliced green cabbage
1 pinch ground cumin
juice of 1/4 lime
drizzle of olive oil
pinch of sugar
salt and pepper to taste

Combine all of the ingredients. Let flavors meld for at least 15 minutes before serving. Makes enough for 1 or two bento sized servings.

Cinco de Mayo Bento

Hola! Happy Cinco de Mayo! I got a bunch of chicken drumsticks from our local hispanic grocery store yesterday (Lola's--I love this place for really great deals!), and simmered them in spices and chili powder, then baked them in a salsa with lots of green onion. They turned out great, and made this bento very flavorful.

In this bento: quesadilla with refried beans, white cheddar cheese, and chicken meat. Also radishes, green onion, navel orange segments, a baby carrot, a dried mission fig, lime flavored cabbage slaw, and walnuts from the Santa Rosa Original Certified Farmers Market. Just for fun, here is the bento I made on Cinco de Mayo last year:

This one had tortillas from La Tortilla Factory, a great company in Sonoma County. I think this one was pretty cute, and I remember that it tasted good. :) Are you doing anything fun to celebrate Cinco de Mayo? Any special meal planned for today?

Pulled Pork Bear Bento

My hubby made some really delicious pulled pork yesterday. He made it in the crock pot, so our whole place smelled divine all day long. Really gets your mouth watering! Today I am having leftover pulled pork sandwiches (designed as a little bear) with some of the leftover coleslaw I made.

I designed this little sandwich bear using a trick I have seen Sheri of Happy Little Bento use often. With a paring knife, I cut two little half circles from the bun, and then pushed them up to make his ears. The face details are cut freehand out of nori. Also in this lunch: a clementine from Schletewitz Family Fruit Stand, broccoli, a few black grapes, and two baby carrots.

Coleslaw Recipe

1/2 head of cabbage, sliced thinly
1 carrot, shredded
1/4 cup mayonnaise
2 tblsp sour cream
2 tsp rice vinegar
2 tsp mustard
1 tblsp sugar
1 tsp dried dill weed
salt and pepper to taste

Combine cabbage and carrot in a bowl. Combine the rest of the ingredients in another bowl, then toss this dressing with the cabbage and carrot mixture. Makes enough for about 8 to 10 bento servings. Goes great with pulled pork!
